A pot that changes as you share it

Our original story began with a simple idea: dakhanmari should be remembered for its broth. It starts gently, then develops as the chicken, vegetables and additions cook together. The noodles at the end bring another texture and a richer finish.

Finding the right balance

We described combining chicken broth, chicken-feet broth and vegetable broth with herbal ingredients and aromatics. The goal was balance rather than intensity. Today, we simmer the broth for at least six hours, usually seven to eight.

Dinner and a shared table

Our clear chicken pot and spicy chicken stew offer different ways to enjoy an evening. What stays the same is our intention: fresh chicken, carefully prepared broth and a meal to enjoy to the last spoonful.
